Healthy Summer Recipe

Caesar-Marinated Chicken Kabobs with Zucchini & Grilled Romaine

These Caesar-marinated chicken kabobs bring bright, grilled summer flavor together with creamy dressing and charred vegetables for a balanced, high-protein meal.
Instructions
To make the Caesar marinade
Mash anchovies, garlic, and pepper into a paste. Add Parmesan, lemon juice, yogurt, olive oil, mustard, and mix until smooth. Reserve half for serving. Coat chicken and marinate 30 minutes or overnight.
For the kabobs
Soak skewers if needed. Slice zucchini and prepare romaine. Thread chicken and zucchini onto skewers. Grill 6–8 minutes, turning often until browned and cooked through.
To finish
Grill romaine briefly until lightly charred. Serve kabobs with romaine and drizzle with reserved Caesar dressing.
